Berry Healing & Vanilla Jelly Slice
A layered, gut-loving treat packed with nourishing ingredients
Looking for a nourishing, jelly-style dessert that’s as good for your gut as it is delicious? This Berry Healing & Vanilla Jelly Slice is layered with goodness and made with Nutraviva Beef Gelatin, known for its powerful benefits for digestion, skin, joints, and overall wellness.
Naturally refined sugar-free, gluten free, and bursting with antioxidants, this slice features a chewy almond coconut base, a creamy vanilla middle layer, and a tangy mixed berry jelly on top. It’s the perfect healthy treat for afternoon tea, meal prep, or sharing with family and friends.
Ingredients
Base:
2½ cups almond meal
1 organic egg
¼ cup coconut oil
¾ cup coconut chips
4 dates
Middle Layer:
400ml coconut cream
2 tbsp organic honey, maple syrup or monk fruit
1 tsp vanilla essence
1 tbsp Nutraviva Beef Gelatin + 2 tbsp filtered water
2 tbsp coconut butter
Juice of ½ a small lemon
Jelly Layer:
2½ cups organic mixed berries
½ cup filtered water
Juice of ½ a small lemon
2 tbsp Nutraviva Beef Gelatin + 4 tbsp filtered water
3 tbsp organic honey, maple syrup or monk fruit
Method
1. Make the Base. Line a square baking dish with parchment paper. Add all ingredients for the base into a food processor & process until combined. Firmly press the mixture into the baking dish until even. Place in the freezer to set.
2. Prepare the Middle Layer. Prepare your gelatin by placing it in a bowl with cold water. Leave for around 5 minutes or until the powder forms into a ball of gel & is 'bloomed'. Place all other ingredients for your middle layer into a small saucepan & heat on a low heat. Take it off the heat before it starts to simmer. Once off the heat, add your gelatin into the liquid & stir well to make sure there are no lumps. Allow the mixture to cool down. Bring the baking dish out of the freezer & pour the liquid onto the base. Place back in the freezer to set. (Note – this usually takes around an hour to set).
3. Make the Berry Jelly Layer. Prepare your gelatin again by placing it in a bowl with cold water. Leave for around 5 minutes or until the powder forms into a ball of gel & is 'bloomed'. Place all other ingredients for your jelly (berries, water, lemon juice & sweetener) into a high-speed blender & blend until smooth. Transfer to a small saucepan & gently heat up over a low heat. Take it off the heat before it starts to simmer. Once off the heat, add your gelatin into the liquid & stir well to make sure there are no lumps. Allow the mixture to cool down. Once cool, bring your baking dish out of the freezer & carefully pour the jelly mixture onto the now set middle layer. Place back in the freezer to set. (Note – this usually takes around 30 minutes).
4. Slice & Enjoy. Once set, cut carefully into squares & enjoy your healthy & gut-healing berry jelly slice.
Storage Tips. Keep in the fridge for up to 5 days or freeze for longer storage. Best served chilled!
