Black Forest & Banana Collagen Muffins

This recipe, developed by Kirsty of @old_salty_trek via @hueimagery, is the perfect balanced blend of indulgence and wellness. These delicious muffins contain luscious berries, dark chocolate and nourishing collagen powder making them an irresistible snack for any time of day.

 

Ingredients

  • 3 medium overripe bananas mashed (approx. 1/3 cup mashed bananas)
  • ¼ cup honey (or preferred natural sweetener)
  • 2 eggs at room temperature
  • 1/3 cup cooled coconut oil (or substitute olive oil)
  • 2 teaspoons vanilla essence
  • 1 teaspoon apple cider vinegar
  • 1 ½ cups chickpea flour
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ¼ teaspoon Celtic salt
  • 3 servings of Nutraviva collagen powder 
  • 1 ½ tablespoons cacao powder
  • ½ cup blueberries
  • ½ cup raspberries
  • ½ quality dark chocolate chopped

 

Method

  1. Preheat oven to 175 degrees Celsius and line muffin tin.
  2. In a medium size bowl, whisk together chickpea flour, baking soda, cinnamon, Nutraviva collagen powder, cacao and salt. Set aside.
  3. In a large bowl, combine bananas, honey, eggs, coconut oil, vanilla essence and apple cider vinegar. Mix well until well combines and creamy.
  4. Add dry ingredients to wet ingredients and mix until just combined. Fold in almost all of the chopped chocolate and berries, leaving a small amount for topping.
  5. Spoon batter into prepared muffin tins. Top batter with remaining chocolate, blueberries and raspberries.
  6.  Cook in oven for about 20 minutes or until tester into centre comes out clean.
  7. Remove from the oven and place on wire rack to cool for 10 to 15 minutes. Enjoy!

Keep well covered at room temperature for up to 3 days. They can also be stored in the freezer for up to 3 months.
