Ingredients
(Serves 4–5 small cup moulds, halve ingredients for a smaller batch)
800ml coconut cream
3 tsp blue spirulina, butterfly pea flower, and blueberry powder blend (or 2 tsp straight blue spirulina)
Pinch of Celtic salt
4 Tbsp Nutraviva Marine Collagen powder
3¼ cup filtered water
6 tsp Nutraviva Beef Gelatin powder
6 Tbsp maple syrup (or natural sweetener alternative, e.g. monk fruit)
3 tsp vanilla essence
3 Tbsp coconut oil (melted and cooled)
Optional garnish: coconut yoghurt, organic blueberries
Method
1. Combine the gelatin powder and water in a saucepan, with no heat. Stir together & allow gelatin to mix together and 'bloom. '
2. Heat the saucepan to a low to medium heat until the gelatine has dissolved & melted through. Continue to stir.
3. Add the dissolved gelatin, collagen and all of the other ingredients to a blender. Blend until smooth & well combined.
4. Taste the mixture and adjust sweetness, if needed.
5. Pour the mixture into moulds, mugs, glasses or a lined cake tin with baking paper.
6. Place in the fridge until set and firm.
7. Once set, garnish with optional coconut yoghurt & blueberries on top.
8. Enjoy your beautiful, blissful, smooth collagen packed Panna Cotta!
Recipe Notes: You can also use Nutraviva Collagen Hydrolysate in place of Marine Collagen if preferred, both offer excellent support for skin, joints, and gut health.
