Ingredients
1 cup Organic Blueberries
2 cups Coconut milk ( or desired milk )
2 tsp Ceremonial Matcha
4 Tbs Nutraviva Collagen Hydrolysate powder
1/2 tsp Celtic salt
3 Tbsp Honey, maple syrup, or monk fruit
3 tsp Lemon juice
2 tsp Lemon zest
1 cup filtered water
400ml Coconut cream (pre-chilled)
Opt - Extra sweetener for matcha
Ice cubes for serving
Method
1. To create blueberry syrup, combine blueberries, water, honey (or alternative sweetener), lemon zest & salt in a small saucepan.
2. Cook on medium-low heat, stirring & smashing berries until they have burst. Continue to cook for about 10 min or until thick & a syrup consistency.
3. Remove from heat, stir in lemon juice. Let cool, strain & store in the fridge.
4. For the cloud, separate the cream & liquid from pre-chilled coconut cream, and reserve the coconut liquid for use in other recipes. Add cream, blueberry syrup, collagen powder & optional pinch of salt. With a hand blender, mix until well combined & smooth.
5. To prepare matcha, sift matcha, add a dash of warm water & whisk briskly until foam is created.
6. Add ice cubes to the glass. Top with matcha, milk of choice & optional extra sweetener. Leaving room to gently top with your blueberry cloud mixture.
7 - Optional topping of fresh berries. Sip away and enjoy your collagen + antioxidant-packed fresh cold brew!
Recipe Notes
💫 You can adjust sweetness levels depending on preference. Monk fruit is a great low-GI option.
💜 Keep leftover blueberry syrup for drizzling over yoghurt, pancakes, or chia puddings.
🥥 Swap coconut milk for almond, oat, or your favourite plant-based milk to mix it up.
🌸 Collagen Hydrolysate can be swapped for Marine Collagen if preferred, just adjust the serving size by half.
