Collagen Protein Krispies

Preparation time: 10 minutes (not including setting time)
Ingredients
50g gluten free rice puffs
40g peanut butter
50g pitted soft dates
3 serves of Nutraviva unflavoured collagen powder
6 tbsp sugar free maple syrup
1 tsp pure vanilla extract
Macros per serve
16.5 carbohydrates
4.1g fats
6.8g protein
Method:
- Melt peanut butter, sugar free maple syrup, and soft dates in microwave for 1 min or until melted and glossy.
- In a large mixing bowl mix peanut butter mixture, collagen and gluten free rice puffs until fully combined. Mixture will look dry at first, so don’t rush to add water, it will result in soggy Rice Krispies. If you must add some moisture warm some extra nut butter. Also, it’s best to use your hand (with gloves on) to combine ingredients.
- Line an 8″ x 8″ baking pan with parchment paper or plastic wrap and press mixture into the bottom evenly.
- To get even portions, lift the pressed mixture out of loaf tin by holding onto the parchment paper. Fold over in half and press down. Divide into 3 then cut each in half to get 6 according to macros above.
- Optional sprinkle with shredded coconut and grated chocolate and press down.
- Chill in the freezer for half an hour, and store in freezer. Enjoy!
