Go Nuts Granola Collagen Bars

These chewy, naturally sweetened bars are loaded with crunchy nuts, seeds, and coconut, making them the perfect on-the-go energy boost!
These bars are the perfect wholesome school or work snack and are free from fruits and oats - an option that can be tricky to find - while still delivering a satisfying, chewy texture with only whole ingredients.

Dry Ingredients
2 cups chopped nuts (equal amounts of almonds, pecans & walnuts used here)
1 1/3 cup coconut chips
6-7 tablespoons Nutraviva Collagen Hydrolysate
1/2 cup pumpkin seeds
1/2 cup ground flaxseed
1 teaspoon ground cinnamon
opt - 1/2 teaspoon Celtic salt (for mixture)
opt - 1/2 cup melted dark chocolate (for topping)
opt - salt flakes (for topping)
Wet Ingredients
2 tablespoons coconut sugar
4 tablespoons melted coconut oil
2 tablespoons unsalted natural ABC butter (almond, Brazil & cashew butter)
5-6 tablespoons pure maple syrup
Instructions
1 - Preheat oven to 160 C. Set aside granola bar mold trays or line baking tray with baking sheet (20cm square tray used here).
2- Add all dry ingredients to a large bowl: nuts, coconut chips, collagen powder, pumpkin seeds, flaxseed, cinnamon & Celtic salt (if using). Stir until well mixed.
3 - Add all wet ingredients to a medium bowl: coconut sugar, coconut oil, ABC butter & maple syrup. Whisk until well incorporated.
4 - Pour wet ingredients over dry ingredients. Stir & fold until very well mixed.
5 - Pour mix into the granola bar molds or baking tray. Add 3 tablespoons of the mixture into each granola mold. Use a small, narrow spoon to press the mixture down into an evenly, very tightly packed layer. For the square baking tray, using a spatula or hands, press the mixture firmly down into an even, very tightly packed layer.
6 - Bake for 22-27 minutes. 25min was the time for this batch. Place granola bar pan or baking tray onto a cooling rack to cool for 50-60 minutes, or until completely firm. Then, for the granola bar pan, remove the bars from the pan & transfer them directly onto the cooling track. For the baking tray, lift bars & baking paper onto a cooling rack. Allow to finish cooling for 1-2 hours. Slice into 12-16 bars (for baking tray only).
7 - Optional topping, drizzle melted dark chocolate over the ends of bars & add a very small sprinkle of salt flakes on top. Store in an airtight container for 1 month at room temperature. Enjoy your chewy, superfood, collagen-packed health bars!
This recipe can be easily changed to use either our Australian Collagen Hydrolysate or Marine Collagen powders also, simply adjust the amount of collagen powder to reflect the recipe requirements.
