Hot Chocolate & Collagen Cake

Ingredients
- 1 egg (60g)
- 80ml low fat Greek yogurt
- 80g banana
- 25g sugar free hot chocolate
- 15g unflavoured Nutraviva collagen powder (or 7.5g Marine Collagen)
- 12g 85% dark chocolate
- Optional toppings - chopped frozen raspberries, grated and shaved chocolate

Method:
- Preheat oven to 180°C if using oven to cook mug cake.
- Break up dark chocolate into chunks to approximately ½ cm in size.
- Add wet and dry ingredients, excluding chocolate chunks, into a blender and blend until well combined.
- Add to a small ramekin and add chocolate chunks on top of the batter.
- Cook in oven for approximately 10 minutes.
- Use a skewer or knife to check if cake is cooked through. If using a microwave to cook, add mixture to a mug and cook for 2 minutes, using a skewer or knife to cook through.
- Once cooled, top with raspberry and shaved chocolate and enjoy!
