Smashed Avo with Collagen
Nothing compares to a classic smashed avo on toast for a Saturday Brunch!
Simply add just 1 heaped tablespoon of your favourite Nutraviva collagen powder into your avocado mix spread to turn this meal into a brunch for champions!
Ingredients
- 2 eggs (optional)
- ½ large ripe avocado
- 1 tablespoon brown mustard
- 1 tbsp of Nutraviva’s Collagen Hydrolysate powder, Marine Collagen powder or Vegan Collagen Alternative powder
- 1 dill pickle
- ¼ cup chopped green onion
- ½ teaspoon red pepper flakes
- ½ teaspoon ground pepper
- serve of sourdough (or bread of choice)
- Handful of rocket
- sea salt to season
Method
- Cook the eggs to your preference – poached/scrambled/boiled/fried.
- Mash avocado, mustard, and mix the collagen of choice together in a bowl.
- Add rest of ingredients and continue to mix until well combined.
- Toast your choice of bread, then layer on the avocado mixture, followed by the eggs.
- Top with the rocket (or other favourite toppings of your choice) and enjoy!
